Recently at Hog Roast Stapleford, we got the amazing opportunity to cater for Mr & Mrs Allen on their wedding day. They selected such a wide variety of food that we have to take the opportunity to talk about the incredible day it was and show off the variety in our menus.
Kicking off with some incredible antipasti platters including a selection of fine Italian cured meats including thinly sliced Prosciutto Parma ham and salami with a little spice – paired with some fine cheese including buffalo style Mozzarella, Parmigiano and Gorgonzola. And of course, no antipasti platter is complete without the artisan breads. We baked Herb Focaccia, Ciabatta and crunchy bread sticks with a soft interior served with an extra virgin olive oil and balsamic vinegar dipping oil. All of which was precisely arranged on wooden boards making a beautiful charcuterie for guests to pick from.
As for the mains, they opted for our Southern Slow Roast Menu pork butt, 24 beef brisket coated in authentic Texan flavours and Cajun spiced whole roasted chickens with a side of bread rolls and wraps. We also brought some additional condiments to choose from including Smokey Sweet BBQ Glaze, Cajun Hot Pepper Sauce (not for the faint hearted) and Legendary Hickory Bourbon BBQ Sauce. And for the vegetarian guests, we grilled vegetable and halloumi skewers, placed on wraps with Tzatziki Dip and sweet and punchy chilli sauce. There were also the accompanying dishes of Greek feta salad, gourmet coleslaw and a mixture of sweet potato and traditional fries.
The guests – which consisted of a full honour guard, as the groom was military, and brought his own master of ceremony – ate all afternoon and, into the evening, enjoying everything Hog Roast Stapleford had to offer. It was a truly incredible day that closed up with profiterole and Tart Au Citron as the dessert. And we were incredibly delighted to here from the bride Hatty told us that when we met the couple at the walled garden wedding fare a while back, she said that she knew that we were the caterers for her!
